Chocolate Chip Peanut Butter Bars

I saw this recipe on the Chocolate Covered Katie website and knew I had to try it.  I am always looking for healthier afternoon snacks or treats to put in my kids lunch boxes.  These are so good!  I made some changes to the original recipe and I hope you love them as much as my kids do!

 Dairy and Gluten Free

Ingredients

  • 1/4 cup unsweetened applesauce
  • 1 cup peanut butter or sunflower seed butter if you want it nut free
  • 1 tsp pure vanilla extract
  • 1 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/3 cup oat flour
  • 2/3 cup pure cane sugar
  • 1/3 cup dairy free chocolate chips
  • 2 tbsp unsweetened almond milk

Instructions

Preheat oven to 350 F.

Grease an 8-inch baking pan.

In a mixing bowl, add your peanut butter (or sunflower butter), then stir in the applesauce and vanilla. In a separate bowl, add the baking soda, salt, flour, sugar, and chocolate chips. Pour the dry ingredients into the wet and mix until all of the flour is incorporated.

Transfer the batter into the baking pan.  Use a spatula or spoon to smooth down the batter and make it level.  Bake 12-15 minutes.  Let them cool for at least 20 minutes before cutting.  You can freeze these if you have any left over! Haha!

Makes about 16 squares.
